The clarification conditions and the selection of the clarification agent are pivotal in eliminating the haze components from red grape juice (RGJ) while minimizing the loss of functional color components. In this context, we synthesized a water glass-based APTES functionalized magnesium silica aerogel (MSA-NH 3 ) incorporating 61.44 molecules/nm 2 of amine groups, resulting in a positively charged zeta potential value of 33.9 mV (pH 3.4) for clarification of RGJ by targeting negatively charged polyphenols. The optimum clarification conditions using MSA-NH 3 were determined as 0.18 g MSA-NH 3 /L RGJ, 20 degrees C, and 60 min through the application of BoxBehnken design. Under these conditions, MSA-NH 3 exhibited excellent adsorption of haze components (3.61 NTU), outperforming the commercial bentonite-gelatine combination (BGC) (5.45 NTU). Furthermore, it exhibited greater efficacy in preserving anthocyanins while adsorbing browning components. MSA-NH 3 has a high potential to serve as a functional alternative clarification agent in the beverage industry due to its promising clarification performance.

Gaziantep (in Turkey) is one of the oldest cities in the World, in which the history of winemaking and viticulture began in ancient ages. It is home to wild white grapes Vitis vinifera Dokulgen and Paf. Three young white wines were produced from these two grapes. Ten phenolics and some chemical characteristics were quantitatively detected in the white wines and musts depending on white wine processes. Phenolic compounds significantly (p &lt; 0.05) increased during the fermentation process. After aging, (+)-catechin and procyanidin B2 contents of white wines were ranged from 1.12 to 1.35 and from 60.69 to 69.02 mg/L respectively. After aging, the quercetin, rutin and myricetin contents of white wines-1, 2 and 3 were ranged from 0.47 to 0.59, from 0.28 to 0.32 and from 0.11 to 13 mg/L respectively. White wines represented with abundant flavanols, tyrosol and chlorogenic acid produced from Dokulgen and Paf mixture with 7:3 ration. It was found that there is a significant difference between hydroxycinnamic acid and hydroxybenzoic acid content of white wines. Dokulgen and Paf white grapes contribute higher amount of phenolic characteristics, better acidity and sugar to white wine while Dokulgen grape contributed more sugar.

In developing countries, fresh fruit juices are prepared and sold without ongoing assessment of the quality and safety of mulberry and carrot juices. Therefore, most fruit juices offered for consumption had high microbial content. This investigation was performed to indicate the efficacy of low concentrations of Cinnamomum verum essential oils (CEO) in the inactivation of E. faecalis and S. aureus in carrot juice and white mulberry juice and the impact on the sensorial characteristics of the juices. CEO antimicrobial activity can prevent the growth of Staphylococcus aureus and Enterococcus faecalis at 12 and 4 degrees C in juices. For the MIC and MBC concentrations, CEO exhibited higher antibacterial effects against S. aureus and E. faecalis. A higher number of pathogens were inactivated at 12 degrees C than at 4 degrees C. Cytoplasmic membrane permeability plays a vital role in the CEO bactericidal action. CEO can be recommended to extend the shelf-life of juices by retaining the sensorial quality and inactivating pathogenic microorganisms, which provides a reference for practical production and application.

This cross-sectional study aims to determine the relationship between chronotype characteristics, dietary habits, and body composition in 110 adults, of which 75.5% are female, residing in Mersin, Turkiye. Data collection included a descriptive information form, the Morningness-Eveningness Scale for assessing chronotype, a detailed 24-hour dietary record for evaluating dietary intake, and Bioelectrical Impedance Analysis for accurate anthropometric measurements of body composition. The evening types had higher BMI, body weight, waist circumference, hip circumference, total fat mass, and lower body water ratio than the morning types. Positive correlations were found between sleep duration and body mass index, total fat mass, and fat percentage. The evening types tended to skip breakfast more frequently and had higher energy intake during dinners and snacks. Additionally, the evening types consumed more lipids, carbohydrates, sodium, and saturated and polyunsaturated fatty acids. These findings suggest that chronotype influences anthropometric measurements, nutritional habits, and meal energy distribution. These findings highlight the importance of considering chronotype characteristics to understand how body composition and dietary patterns interact, underscoring the need for customized interventions to promote healthier lifestyles.
